Summer Squash Bread 🍞🌞🍋

A moist, lightly sweet quick bread bursting with tender yellow squash, warm spices, and golden edges—perfect for summer breakfasts or snacking!
Ingredients 🛒
● 2 cups all-purpose flour
● 1 tsp baking powder
● 1/2 tsp baking soda
● 1/2 tsp salt
● 1 tsp ground cinnamon
● 1/4 tsp ground nutmeg
● 2 large eggs
● 1/2 cup vegetable oil
● 1/2 cup granulated sugar
● 1/4 cup brown sugar
● 1 tsp vanilla extract
● 1 1/2 cups grated yellow summer squash (squeezed dry)
● Optional: 1/2 cup chopped nuts or chocolate chips
Directions 👩‍🍳
1️⃣ Preheat oven to 350°F (175°C). Grease a 9×5″ loaf pan.
2️⃣ In a bowl, whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3️⃣ In another bowl, beat eggs, oil, sugars, and vanilla until smooth.
4️⃣ Stir dry ingredients into wet just until combined. Fold in grated squash (and nuts if using).
5️⃣ Pour batter into loaf pan and smooth the top.
6️⃣ Bake for 50–60 minutes, or until a toothpick comes out clean.
7️⃣ Cool in pan 10 minutes, then transfer to a rack to cool completely.
