This Pickle Salsa is a unique and incredibly flavorful twist on traditional salsa, offering a delightful tangy kick. It’s a fantastic dip for chips or a vibrant topping for tacos, burgers, or grilled meats.

- Combine Ingredients: Get your favorite food processor out and dump all the ingredients into it: the quartered Claussen pickles, pickle brine, quartered roma tomatoes, 14 oz. can of petite diced tomatoes, garlic clove, chopped red onion, chopped fresh cilantro, chopped jalapeno, and the juice of one lime.
- Note: If you don’t have a food processor, you can finely dice all ingredients by hand to create a “pickle-de-gallo.”
- Process to Desired Texture: Pulse the food processor until all the ingredients are evenly chopped and have created your desired salsa texture. For a classic restaurant-style salsa, process until finely chopped.
- Season and Chill: Season the salsa with salt and pepper to taste. Transfer to a bowl and refrigerate for at least 20 minutes, or ideally overnight, for the maximum pickle flavor to develop.
