Pickle Salsa

This Pickle Salsa is a unique and incredibly flavorful twist on traditional salsa, offering a delightful tangy kick. It’s a fantastic dip for chips or a vibrant topping for tacos, burgers, or grilled meats.

Ingredients:

Ingredient Quantity
Claussen pickles, quartered 1 cup
Pickle brine 1/3 cup
Roma tomatoes, quartered 3
Petite diced tomatoes 1 (14 oz.) can
Garlic clove 1
Red onion, chopped 1/4 cup
Fresh cilantro, chopped 1/4 cup
Jalapeno, chopped 1
Lime, juiced 1
Salt & pepper To taste

Instructions:

  1. Combine Ingredients: Get your favorite food processor out and dump all the ingredients into it: the quartered Claussen picklespickle brinequartered roma tomatoes14 oz. can of petite diced tomatoesgarlic clovechopped red onionchopped fresh cilantrochopped jalapeno, and the juice of one lime.
    • Note: If you don’t have a food processor, you can finely dice all ingredients by hand to create a “pickle-de-gallo.”
  2. Process to Desired Texture: Pulse the food processor until all the ingredients are evenly chopped and have created your desired salsa texture. For a classic restaurant-style salsa, process until finely chopped.
  3. Season and Chill: Season the salsa with salt and pepper to taste. Transfer to a bowl and refrigerate for at least 20 minutes, or ideally overnight, for the maximum pickle flavor to develop.
