- Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Cream Butter and Sugar: In a large mixing bowl, add the 1 cup granulated sugar and melted unsalted butter. Mix with an electric mixer for 1 minute or until the mixture is light and airy.
- Add Eggs and Vanilla: Add the room temperature eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
- Combine Dry Ingredients: In a small bowl, sift together the cake flour, baking powder, and salt.
- Alternate Wet & Dry: Slowly add the dry mixture to the wet ingredients in the large bowl, mixing on low speed until just combined.
- Fold in Sour Cream: Gently fold in the sour cream until the batter is smooth and well incorporated. Be careful not to overmix.
- Bake: Transfer the cake batter to the prepared baking dish and spread it evenly. Sprinkle the remaining 2 tablespoons of granulated sugar evenly over the top of the batter.
- Bake: Bake for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
- Cool: Allow the cake to cool completely in the pan before slicing and serving.
