This French Butter Cake is a wonderfully rich, moist, and tender cake that truly celebrates the flavor of butter. With a hint of vanilla and a delicate crumb, it’s a simple yet elegant dessert that’s perfect for coffee, tea, or a light sweet treat.

Ingredients:

Granulated sugar 1 cup
Unsalted butter, melted 1 cup (2 sticks)
Eggs, room temperature 3
Vanilla extract 2 ½ teaspoons
Cake flour 2 cups
Baking powder 2 teaspoons
Salt 1 teaspoon
Sour cream ⅔ cup
Granulated sugar, for topping 2 tablespoons

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Cream Butter and Sugar: In a large mixing bowl, add the 1 cup granulated sugar and melted unsalted butter. Mix with an electric mixer for 1 minute or until the mixture is light and airy.
  3. Add Eggs and Vanilla: Add the room temperature eggs one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  4. Combine Dry Ingredients: In a small bowl, sift together the cake flour, baking powder, and salt.
  5. Alternate Wet & Dry: Slowly add the dry mixture to the wet ingredients in the large bowl, mixing on low speed until just combined.
  6. Fold in Sour Cream: Gently fold in the sour cream until the batter is smooth and well incorporated. Be careful not to overmix.
  7. Bake: Transfer the cake batter to the prepared baking dish and spread it evenly. Sprinkle the remaining 2 tablespoons of granulated sugar evenly over the top of the batter.
  8. Bake: Bake for 30-35 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean.
  9. Cool: Allow the cake to cool completely in the pan before slicing and serving.
